Boar are artiodactyl mammals (from the Greek artios, “pair” and daktylos, “finger”, that is, his limbs end in an even number of toes. Its good sense of smell compensates a poor eyesight.

Senglar is an aging wine completely made from Syrah grapes.

Maceration at 10 °C and fermentation from 15 °C to 20 °C.

This wine remains in French oak barrels during six months and rests in bottles during at least eighteen more months. It has the colour of a dense and persistent tear with a very high robe.

Russet deep red, humid touch. Its body cannot be recognised other than for its refined taste due to the fact that the aroma is very light and there is no need to oxygenate it. Loyal to the scar of good taste, subtly roasted with notes of toffee.

A spicy background of cloves and pepper transforms dinners and lunches. It has a soft, tannic, pleasant and very warm aftertaste. It is so soft to the touch that it might be said to be made of cotton, just as Juan Ramón Jiménez’s little donkey, Platero. One can notice that it has been aging in oak barrels as the aftertaste is strong and full of acorns.

This wine nicely blends stewed cuisine with the fire of grilled preparations. Ideal with deer, boar and stews. Best served between 14 °C and 16 °C. Senglar is a wine that speaks, makes pauses at lunchtimes, listens to the silence and keeps talking to the end of the throat, its unique goal is to please diners.
